Swiss Chard is a mild green with colorful stems of white, red, orange, pink and yellow. You can eat it raw, but I like to saute it with olive oil, onions and garlic. It is a meal if I add a can of beans. I also like swiss chard in this quiche recipe that was supplied by my neighbor Jeanne. When I don’t have time to make the crust, which is actually very easy (no rolling, just pressing with fingers) I use a frozen whole wheat pie crust.
