Kale bunches are approximately 1/2 lb or more depending on variety and size of stalk. If you have a specific recipe that you want a specific type of kale for, then please leave a note on your order.  Lacinato, aka Dinosaur or Tuscan kale is the flat leaf one.  Lacinato and the siber-frill are the sweetest eaten raw in salad.  The darkibor and redbor curly kale I like cooked.
