We pick peppers when they are ripening, some may still have some green on them as they continue to change to their ultimate ripe color. Peppers will continue to ripen on your counter, so if you receive some that have not turned completely, don’t put them in your refrigerator. The varieties we grow are Carmen (long red) IKO IKO (starts purple and white then turns yellow, red or orange), Lively Yellow, Lively Orange, Glow, Lunchbox (small almost seedless, orange, red or yellow).
